– 1 grated lemon zest

– 1 liter of milk
– 250 g light ricotta
– 90g stevia sweetener (or 180g caster sugar alternatively)
– 30 g of 00 flour
– 30 g cornstarch
– 5 g of vanilla
– Ingredients for soaking
– 400 ml of cold milk
– 15g stevia sweetener (or 30g caster sugar alternatively)
Preparation:
1. Start by cracking the eggs into a bowl, add the stevia sweetener (or sugar), and beat them with an electric mixer for 3 minutes.
2. Sift the flour and add it to the bowl along with the vanilla, baking powder, and lemon zest. Mix by hand until smooth and free of lumps.
3. Line a baking dish with baking paper, pour the batter into it, and spread it evenly. Bake in a preheated oven at 170°C for 14-15 minutes.
4. While the cake is baking, pour the milk into a saucepan with the stevia sweetener (or sugar), cornstarch, and flour. Mix by hand and bring to a boil. Then, add the ricotta and vanilla.
5. Mix the milk with the stevia sweetener (or sugar) separately and set it aside, as it will be used later for soaking.
6. Allow the cake base to cool, then turn it over onto a plate, remove the baking paper, moisten it with the soaking mixture, fill it with cream, and decorate it with coconut flakes.
